Karniyarik is the most delicious Turkish Eggplant

In my opinion, Karniyarik is the most
delicious Eggplant dish of the Turkish cuisine. Turkish cuisine is divided
into hot and cold dishes, and on the hot side, this is the best eggplant
dish. The eggplant and the mince meat both are treated with the best
methods to give them their best tastes. The mince meat in Karniyarik is
cooked so
delicious that you can eat it by itself with bread or rice.
Parsley is a must
As you can see, there is some parsley
in the stuffing. Even though it seems like a little bit only, is a must.
The taste difference is big. In Japan, they call our parsley as Italian
parsley. You can use that. But Japanese parsley is also ok.
A note on frying
The oil used for frying the eggplants
should be really hot. Otherwise they can absorb some oil and so they may
taste slightly oily.
With bread or rice
I strongly suggest that you eat
Karniyarik with rice or best quality bread. In Turkey we almost always eat
either bread or plain white pilaf with Karniyarik. Bread for Turkey is what
rice is for Japan. But that is Turkish bread, and is a different story. For
example we like to eat bread in a few hours after it was baked, if we can
in half an hour. You can say 70million people in Turkey eat one bread
everyday, and all those breads are always the same because they found the
right way to bake it and everybody wants it that way.
